The taste of Japan menu is inspired by the Kaiseki form of Japanese cooking. Sae has grown up in this environment being from a family of restauranteurs and although relatively new to me I have spent the last few years training in this style of cookery. We wanted to be able to offer this as an alternative to the guests of Sorrel house as a one off unique experience for those who are interested in trying authentic Japanese cuisine!
The kaiseki menu costs £50 per person.
Any fish we use in the menu is of sushi grade quality and we can go through dishes in more detail if guests are a little unsure of trying certain foods or using certain preparation techniques. As with the taste of home menu these dishes too are a reflection of what we love to eat when we eat out in Japan and to give you a brief overview the general rule with kaiseki is as follows
Sakizuke (先附):
an appetizer similar to the French amuse-bouche.
Hassun (八寸):
the second course, which sets the seasonal theme. Typically one kind of sushi and several smaller side dishes.
Mukōzuke (向付):
a sliced dish of seasonal sashimi.
Takiawase (煮合):
vegetables served with meat, fish or tofu; the ingredients are simmered separately.
Futamono (蓋物):
a "lidded dish"; typically a soup.
Yakimono (焼物):
flame-grilled food (esp. fish)
Su-zakana (酢肴):
a small dish used to cleanse the palate, such as vegetables in vinegar; vinegared appetizer.
Hiyashi-bachi (冷し鉢):
served only in summer; chilled, lightly cooked vegetables.
Naka-choko (中猪口):
another palate-cleanser; may be a light, acidic soup.
Shiizakana (強肴):
a substantial dish, such as a hot pot.
Gohan (御飯):
a rice dish made with seasonal ingredients.
Kō no mono (香の物):
seasonal pickled vegetables.
Tome-wan (止椀):
a miso-based or vegetable soup served with rice.
Mizumono (水物):
a seasonal dessert
Allergies:
We can cater for all allergies/dietary requirements, but we must be notified at time of booking. If not notified until the day of the meal, you may have to miss some courses.
Prepayment:
We require full payment for food at time of booking, however you can get a refund (not within 72hrs of your booking date) if your plans change.
